CHRISTMAS RECIPE

THE PEACH

In Australia some fruit we specifically serve during Christmas time. One of our favourites is the PEACH !

PEACH CHRISTMAS CRUMBLE

INGREDIENTS
8 cups pitted peaches, sliced thinly
1/3 cup sugar
1/4 cup plain flour
1 vanilla bean, scrape seeds

CRUMBLE
1/2 cup plain flour
1/4 cup sugar
2 tbsp oats
1/8 tsp salt
1/4 cup cold unsalted butter, cut to small pieces

ALSO
1 egg, beaten
1 tbsp water
1 batch half and half pastry

INSTRUCTIONS
Preheat to 180C.

Mix peaches with 1/3 cup sugar, 1/4 cup flour and vanilla seeds in a bowl until coated. Leave for 10 mins but stir occasionally, until flour is absorbed.

Stir 1/2 cup flour with 1/4 cup sugar, oats and salt in a bowl. Add butter and work mixture until crumbly, with your fingers.

Beat an egg with water in a small bowl. Roll out pastry into a 30cm circle on a floured surface. Lift onto 22cm pie plate set on a baking sheet. Press dough over bottom and up sides of plate, leaving a 3cm overhang. Tuck pastry edge under itself and crimp together with a fork. Scrape peach mixture into pastry evenly. Lightly brush pastry with egg wash, sprinkle crumble mixture over peaches.

Bake in bottom third of oven until golden, 1 hour and 30 min. Let stand at least 2 hours before serving, or overnight.
