The Finger Lime

Finger Lime. The Australian finger lime plant (Citrus australasica) is a thorny understorey shrub or small tree of lowland subtropical rainforest and dry rainforest in the coastal border region of Queensland and New South Wales, Australia. It has edible fruits which are under development as a potential new commercial crop.

 

It has a unique lime zesty taste and can be used in salads, seafood, pasta and curries.

 

 

EASY QUICK RECIPE: Seafood in a Finger Lime Marinade

Ingredients
2 cups of cooked seafood

Marinade
1 – 2 chilli, crushed
juice from finger limes or if you dare, in small pieces with the peel
salad oil, salt and pepper
2 cloves of garlic

Cover the seafood in the marinade the night before.  When ready, either lightly fry or skewer and grill. Serve on a bed of rocket. Simple.
