Cauliflower

Cauliflower is an annual plant that reproduces by seed. Typically, only the head is eaten – the edible white flesh sometimes called "curd".

 

100 grams of raw white cauliflower provides 25 calories, is low in fat, carbohydrates, dietary fiber and protein. It has a high content (20% or more of the Daily Value, DV) of vitamin C and moderate levels (10-19% DV) of several B vitamins and vitamin K.

 

Curried Cauliflower Pasta

 

Ingredients
50g each - Onion, Carrot, Potato chopped
Half a head of cauliflower
Cooking oil 
250ml water 
1-2 teaspoons of curry 
1-2 cloves of fresh garlic
250 g Spaghetti, pre-cooked
80ml cream 
Grated cheese to taste
Salt and Pepper
1 tablespoon fresh parsley, chopped

 

Directions
1 Heat cooking oil in a pot and stir fry garlic, onions, carrot, potato and cauliflower.

2 Add water and bring to boil. Cook for about 10 minutes with low heat until done.

3 Turn off the heat, add curry and cream and turn on the heat again and simmer until thickened (about 2-3 minutes).

 

Place pre-cooked spaghetti on a plate and pour curry over it. Sprinkle powdered cheese, black pepper and parsley to taste.

 

Serves 2
